Slow Cooker Chicken Cacciatore


This is soooo easy. 


Slow Cooker Chicken Cacciatore 

1 Large Onion
1/4 cup tomato paste
2 tablespoons olive oil
6 cloves garlic, minced
1/4 teaspoon red pepper flakes
1 teaspoon dried oregano 
1 teaspoon dried basil
2 cups sliced Baby Bella mushrooms
1 can diced tomatoes, 14.5 oz. 
1/2 cup chicken broth
1/2 cup red wine
2 tablespoons Minute tapioca
6 boneless, skinless chicken thighs
Salt and pepper 

1. Microwave onions, tomato paste, garlic, oregano, basil, mushrooms, and red pepper flakes until onions are softened, about 5 minutes. Transfer to slow cooker. 

2. Stir tomatoes, broth, wine, and tapioca into slow cooker.  Season chicken with salt and pepper and nestle into slow cooker. Cover and cook for 4-6 hours on low.  

Can serve over pasta.

Do you chop the onions? When do you use the 2 T of olive oil? Where in the grocery store can you find the tapioca? Thanks!

Hi Sandy! Sorry , I should have said that the onion is chopped! And I add the oil to the onions before microwaving. Also, the last time I made this, I left the mushrooms out of the microwave and just added them to the Slow Cooker without microwaving and it was better. Thanks for stopping by and leaving a comment.
