Blueberry Bran Muffins




These are a staple at my house.

2 cups buttermilk
1 egg
2 tablespoons oil
1/2 cup honey
2 cups whole wheat flour
1 1/2 cups wheat bran
1 cup blueberries
1 teaspoon baking soda
1 teaspoon baking powder

Preheat oven to 350 degrees. Combine buttermilk, egg, oil, and honey. Stir together flour, bran, baking powder and baking soda. Add to liquid ingredients.  Stir in blueberries.  Pour into oiled muffin tins. Makes about 18 medium sized muffins. Bake for 20 minutes.

I'm not much on muffins...but give me FRESH blueberries and I have been known to 'oink' a bit here and there. lol

I love blueberries in muffins, in my oatmeal, in a salad, and just plain by themselves too!😊
