Banana Nut Bread



This recipe comes from the old (1970s) La Leche League Mother's in the Kitchen cookbook. I have never found a recipe for Banana Nut bread that is any tastier or packed with more nutrition. 

1/2 cup oil
1 cup brown sugar
1 teaspoon vanilla
3 ripe bananas
2 eggs
1 1/2 cup whole wheat flour
1/2 cup wheat germ
2 teaspoons baking powder
1 teaspoon cinnamon 
3/4 cup pecan pieces

Cream oil,mustard, bananas, vanilla, and eggs. 
Add remaining ingredients and stir well. 
Bake in loaf pan which has been sprayed with Pam. 
Bake at 325 degrees for 1 hour and 10 minutes.
