This is soooo easy.
1 Large Onion
1/4 cup tomato paste
2 tablespoons olive oil
6 cloves garlic, minced
1/4 teaspoon red pepper flakes
1 teaspoon dried oregano
1 teaspoon dried basil
2 cups sliced Baby Bella mushrooms
1 can diced tomatoes, 14.5 oz.
1/2 cup chicken broth
1/2 cup red wine
2 tablespoons Minute tapioca
6 boneless, skinless chicken thighs
Salt and pepper
1. Microwave onions, tomato paste, garlic, oregano, basil, mushrooms, and red pepper flakes until onions are softened, about 5 minutes. Transfer to slow cooker.
2. Stir tomatoes, broth, wine, and tapioca into slow cooker. Season chicken with salt and pepper and nestle into slow cooker. Cover and cook for 4-6 hours on low.
Can serve over pasta.
Clever way to cook chicken. Thanks for sharing.
ReplyDeleteI have some chicken thighs. Might modify the recipe here.
ReplyDeleteDo you chop the onions? When do you use the 2 T of olive oil? Where in the grocery store can you find the tapioca? Thanks!
ReplyDeleteHi Sandy! Sorry , I should have said that the onion is chopped! And I add the oil to the onions before microwaving. Also, the last time I made this, I left the mushrooms out of the microwave and just added them to the Slow Cooker without microwaving and it was better. Thanks for stopping by and leaving a comment.
